About me

After working as a chef at Geranium in Copenhagen – a three-star Michelin restaurant lauded as one of the world’s best – Steffen Bach travelled to Osaka in 2017 to learn the legendary art and craft of Japanese knife sharpening from the best in the industry. Today, as just one of three foreigners outside of Japan to master the craft, Bach has founded Suba Knives in Copenhagen.

After his 3.5 year apprenticeship under master Keiichi Fujii and Tower Knives Osaka, Steffen Bach returned to Denmark to start his own knife business in mid 2021.

The dream is to set up a workshop in Copenhagen to produce kitchen knives of top quality, thus combining Steffen Bach’s experience from the food scene and his time with Japanese master smiths and sharpeners.

Let me help you

Through Suba Knives, Steffen offers his services to private and professional users. The knives are sharpened and polished by hand on traditional Japanese whetstones with a coarseness of 240-8000 depending on the type of knife. Some people think expensive knives should not be sent by mail. We offer to pick up your knives and return them in less than a week. Please contact me so that we may figure out the best solution for you.
